Pancakes that are healthy? Yup! Originally this recipe was created for ViSalus shake powder and was a big hit! Blueberry Protein Pancakes make you feel like you are spoiling yourself, but they’re actually a healthy start to any morning. Instead of flour, Bisquick or other carbs as a base, these pancakes start your off with a healthy dose of protein!

One of my best childhood memories is making pancakes with my dad on the weekends. I loved to be the “stirrer” and mix all the ingredients together in the big stainless steel bowl. Blueberries were always a favorite addition, especially when they were in season and could be picked right in our yard.

As an adult, I think about these wonderful memories every time I make pancakes, but as much as I love the nostalgia, I’m wary about carbs, so I wasn’t making pancakes as much. Then I discovered these protein pancakes! Now, I can make basically carb-free pancakes and have my moment of nostalgia in the kitchen!

Even better, my family loves these pancakes! They had no idea there were no carbs! I love that I can trick them into eating healthy food and then surprise them with a big reveal after they’ve given it rave reviews! Does that happen in your house too?

Try them for breakfast this weekend. We think you’ll have a more enjoyable Saturday or Sunday because of the good start they give you.

Instructions
  1. Mix ingredients together and let stand 5 minutes.
  2. Spray medium size frying pan and heat on medium heat.
  3. Place 1/4 cup batter in pan.
  4. When edges start to brown, flip over and cook another minute.
