Why This Coconut Chicken Is So Good

You’ll notice that the recipe also uses protein powder (ViSalus protein powder). No, coconut chicken isn’t a shake! You can cook with protein powder too! We made these awesome blueberry pancakes with protein powder. It’s a great way to reduce carbs and amp up your protein intake.

In this dinner entrée, the protein powder combined with coconut creates a great crust that’s a party in your mouth and keeps the chicken moist and tender. Although it takes an hour to bake, the prep work is quick, so you can make it after work. And it’s kind of fun, too!

Coconut chicken also stores well. Make it on Sunday and have lunches or dinners for the whole week. The leftovers are great! For sides, if you’re not into tropical fruit, think about rice pilaf and green beans.

Instructions
  1. Preheat oven to 350°.
  2. Mix protein powder and coconut together.
  3. Dip chicken in beaten egg.
  4. Dip chicken in protein and coconut mixture to thoroughly coat.
  5. Place chicken on greased pan.
  6. Bake for 1 hour or until chicken is no longer pink when cut in the middle.
