Vegetarian Orzo and Spinach Soup

  • 1Small Onionpeeled and diced
  • 1Cup Celerydiced
  • 3Cloves garlicpeeled and minced
  • 6Cups Vegetable or Chicken Broth (Fat Free)
  • 114 Ounce Can Fire-Roasted Diced Tomatoes
  • 1 1/2Cups Orzo Pasta
  • 1/2tsp Dried Thyme
  • 1/4tsp Dried Oregano
  • 1/4tsp Dried Rosemary
  • 4Cups Fresh Spinachloosely packed
  • Salt & Pepperto taste
  1. Spray bottom of large pot.
  2. Dice onions and place in a large pot on medium heat.
  3. Dice carrots and celery and add to pot.
  4. Mince garlic and add to pot.
  5. Add 6 cups of vegetable stock.
  6. Add fire roasted diced tomatoes and orzo.
  7. Add thyme, oregano and rosemary.
  8. Bring to a boil and then simmer for 10 minutes, until orzo is cooked.
  9. Add spinach and cook for 2 minutes.
Recipe Notes
  • My vegetable stock was unsalted so I added garlic salt and a pepper medley to mine to bring out the flavors.
  • My boyfriend wanted meat so he added precooked Jimmy Dean turkey sausage.
