This has become a new favorite for us! We love chicken and using a crockpot. I work at home and there is nothing like smelling dinner cook all day. For those of you who work outside the home, it’s wonderful to come after a long day have dinner ready and waiting for you. This Slow Cooker Balsamic Chicken recipe can be eaten a variety of ways so you can have this over and over without growing tired of it. The best part is it’s Weight Watchers friendly! At only 4 smart points for one and a half cups of this mix, you can eat without regrets!  And since it’s only 3 ingredients, even the most novice cook can make this delicious dish.

Hot or cold, you can use it as a way to make salads heartier or serve it over rice or pasta. If you’re in the mood for tacos, this makes a great filling instead of beef or refried beans. Shred the chicken and serve it between two buns or bread in sandwich form. The possibilities are endless! There are so many ways to enjoy this fabulous slow cooker chicken dish that you’ll never get tired of eating it.

Spice Up Your Slow Cooker Balsamic Chicken

Weight Watchers Slow Cooker Balsamic Chicken

Ingredients
  

  • 2 Pounds Chicken Breasts
  • 2 Cups Medium Salsa
  • 1/2 Cup Balsamic Vinegar

Instructions
 

  • Clean chicken and remove all fat.
  • Spray bottom and sides of slow cooker (optional) for easy clean up later.
  • Place chicken in bottom of slow cooker.
  • Pour salsa and vinegar on top of chicken.
  • Cover and cook on low for 7 hours.
  • Shred chicken with fork or break in to pieces with fork.
  • Serve on rice, with salad or fresh produce, as taco meat, etc.
