If you haven’t noticed, I love using the slow cooker! Crockpot meals are so easy to make and they make the whole house smell great! Plus, by the time I’m hungry for dinner, it’s ready and I don’t have to spend time trying to figure out what to eat. And if I’m tired from a long day of work, I don’t have to figure out what to cook. The best part is I work from home so I get to enjoy the aromas all day! I prep the meal either the night before or in the morning before I start my day.
There are so many varieties to try and since starting my diet, I’ve been eating this Slow Cooker Weight Watchers Vegetable Soup every day.
It’s 0 Smart Points with Weight Watchers. I get so full and I haven’t blown any points for the day. I love that I can use those points on other things, like dessert! I also love knowing I can go back for seconds without concern. Who doesn’t love seconds?
I LOVE the flavor of the soup! It’s really easy to make and I add variation to it all the time. For example, sometimes I add peas instead of green beans or kale instead of spinach. No matter what vegetables I swap in or out, this slow cooker vegetable soup helps me stick to my Weight Watchers plan without feeling hungry. It’s so good, even my picky teenager likes it!

- 1 Cup Green Pepper chopped
- 1 Cup Onion chopped
- 1 Cup Frozen Green Beans
- 1/2 Cup Carrots chopped
- 2 Ribs Celery chopped
- 2 14 Ounce Cans Diced Tomatoes
- 4 Cups Vegetable or Chicken Broth (Fat Free)
- 2 Tbsp Hot Salsa
- 1 tsp Minced Garlic
- 10 Ounces Fresh Spinach
- 2 Bay Leaves
- 1 Tbsp Dried Basil
- 1 tsp Dried Oregano
- Chop all ingredients.
- Chop all vegetables.
- Add all ingredients to slow cooker.
- Cook on low for 4 hours or until vegetables are done.
Soup in a crockpot has always been a favorite in our house. This slow cooker Weight Watchers vegetable soup is no different. Hopefully, we’ll eat it well into the warm months too.
