Weight Watcher’s Vegetable Soup is one of the top recipes I’ve used to lose a lot of weight fast… and in a healthy way. If you haven’t noticed, we love using our slow cookers! We love them so much we have an entire section on this blog just about crockpot recipes.  One crockpot recipe we love is the 0-point Weight Watchers Vegetable Soup. Crockpot meals are so easy to make, and they make the whole house smell great! Plus, by the time we’re hungry for dinner, it’s ready.  At the end of the day, no one wants to spend time trying to figure out what to eat. The best part is we both work from home, so we get to enjoy the aromas all day! We prep the meal either the night before or in the morning before we start the day.

There are so many varieties to try, and since starting our get healthy diets, we’ve been eating this Slow Cooker Weight Watchers Vegetable Soup every day.  Before you ask, no, we do not get sick of the same thing.  Because this recipe never gets boring!  We “mix and match” veggies depending on what’s in season and/or what’s in our fridges or freezers.  Also, if you enjoy canned vegetables, you can use those as well.  We do caution about added salt when using cans though.

Packed full of vegetables, this soup is 0 Weight Watcher points! We usually pair it with a grilled cheese sandwich. And if you’re following a Weight Watcher’s diet, we recommend the Natural Ovens Keto Friendly Bread. We pick this up from Costco but if you don’t have a membership, you can get it on Amazon here. It’s a lot more money on Amazon though than it is at Costco though. Back to our veggie soup.  It’s so filling, we feel satisfied and stay within our points for the day every time we eat this for lunch! Seriously!  We love that we use those ‘saved’ points on other things.  For instance, dessert (see below for a scrumptious weight watchers dessert)! We also love knowing we can go back for seconds without concern. Who doesn’t love seconds?

The salsa and diced tomatoes add just the right amount of spice for us. If you want more spice, add more salsa or green tabasco.  Cumin is also an interesting spice to be added if you desire.  Spices really do add some zip to dishes!

Variations to the Weight Watchers Vegetable Soup

As we mentioned earlier in this post, because this soup is easy to make and has a great tomato base, you can mix up what you put in for vegetables however you like! Here are a few ways we mix it up:

  • Peas instead of green beans
  • Kale instead of spinach
  • Cauliflower rice to give it more texture (this is my favorite cauliflower rice)
  • If you have the point allowance, you can even add turkey burger (but it doesn’t need it!)

Weight Watchers Vegetable Soup Recipe

We both like the onions softer than the rest of the vegetables so we usually cut up the onions first, put them in the crockpot and get it heating up while we start to cut everything else up and open the cans (if using canned vegetables). We’ve compared and tested lots of crockpots.  We even asked our Mom’s opinion.  Hands down, our favorite crockpot is this digital crockpot. It comes with handles that make it easy for travel in case you are going to a party. Let’s face it, a safe way to transport soup is a MUST!  And if you’re going to a gathering, you want to have time to get ready.  So this recipe in a crockpot hits a plus on many levels!  That’s really about it for this recipe. There aren’t a lot of tips because it’s so easy!

Ingredients
  

  • 1 Cup Green Pepper chopped
  • 1 Cup Onion chopped
  • 1 Cup Frozen Green Beans
  • 1/2 Cup Carrots chopped
  • 2 Ribs Celery chopped
  • 2 14 Ounce Cans Diced Tomatoes
  • 4 Cups Vegetable or Chicken Broth (Fat Free)
  • 2 Tbsp Hot Salsa
  • 1 tsp Minced Garlic
  • 10 Ounces Fresh Spinach
  • 2 Bay Leaves
  • 1 Tbsp Dried Basil
  • 1 tsp Dried Oregano

Instructions
 

  • Chop all vegetables.
  • Add all ingredients to slow cooker.
  • Cook on low for 4 hours or until vegetables are done.
